A bit of history...
During the time when the Dukes of Savoie reigned, the Savoie stretched from Geneva to Turin and to Nice with Chambery as the capital. There was therefore extremely varied local produce due to the multitude and contrast between areas: fish from lakes and rivers, breeding of bovines, ovines, pigs, marsh and cereal crops from the plains of Savoie or Pô, fruits, wines, cheeses and even some sea foods brought up from the Mediterranean.
Savoie was also a compulsory passing point on the spices route from southern Europe to northern Europe. Salesmen would sell the spices on site in winter if they could no longer travel.
